  • 2 cups short pasta (penne or rotini)
  • 2 cups shredded cheddar cheese
  • 1 cup diced bell peppers (mixed colors)
  • 1 medium onion, diced
  • 1 tsp garlic powder
  • 14 oz canned diced tomatoes
  • 1 tsp Italian seasoning
  • 1 cup breadcrumbs

Instructions

  1. Preheat oven to 350°F (175°C) and grease a baking dish with nonstick spray.
  2. Cook pasta in boiling salted water until al dente (about 8-10 minutes). Drain and set aside.
  3. In a skillet, brown the ground beef over medium heat until fully cooked. Add onions and bell peppers; sauté for about 5 minutes until softened.
  4. In a large bowl, combine pasta, beef mixture, canned tomatoes, garlic powder, Italian seasoning, and half of the cheddar cheese. Mix well.
  5. Transfer to the greased baking dish, top with remaining cheese and breadcrumbs. Bake uncovered for 20-25 minutes until golden brown.
