- 1 lb ground turkey (85% lean)
- 2 medium zucchinis, diced
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 1 bell pepper (any color), diced
- 1 cup diced tomatoes (canned or fresh)
- 2 tsp Italian seasoning
- 1 tbsp olive oil
- Salt & pepper to taste
Instructions
- Prep your ingredients: Wash and dice the vegetables into small pieces.
- Sauté the aromatics: In a large skillet, heat olive oil over medium heat. Add onion and bell pepper; cook until softened (about 5 minutes).
- Add ground turkey: Push veggies aside and add turkey to the skillet. Cook until browned (7-10 minutes).
- Incorporate zucchini & garlic: Add minced garlic and zucchini; cook until zucchini softens (3-5 minutes).
- Add tomatoes & seasonings: Stir in diced tomatoes, Italian seasoning, salt, and pepper; simmer for another 5 minutes.
- Serve & enjoy: Enjoy hot as-is or over rice.
