- 1 pound fresh green beans, trimmed
- 1 pound new potatoes, diced
- 6 ounces thick-cut bacon
- ½ cup ranch dressing
- 1 medium sweet onion, thinly sliced
- 1 teaspoon garlic powder
- ½ teaspoon freshly cracked black pepper
Instructions
- In a large skillet over medium heat, cook the bacon until crispy. Remove from pan and let drain on paper towels, leaving some drippings in the skillet.
- Add sliced onions to the skillet and sauté until translucent. Toss in the green beans, cooking until bright green and tender-crisp.
- Stir in diced potatoes along with garlic powder and pepper. Cook for about 15-20 minutes until potatoes are fork-tender.
- Turn off the heat and mix in ranch dressing gently to coat all vegetables evenly.
- Crumble crispy bacon over the top just before serving.
