- 2 cans (15 oz each) butter beans, drained and rinsed
- 1 cup heavy cream
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 tsp Italian seasoning
- 2 tbsp extra virgin olive oil
- 1/2 cup grated Parmesan cheese
- Salt to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Sauté minced garlic until fragrant (about 30 seconds), then add chopped sun-dried tomatoes.
- Pour in heavy cream while stirring; add Italian seasoning and salt. Let simmer for about five minutes until slightly thickened.
- Gently fold in butter beans and spinach, cooking until the spinach wilts (about three minutes).
- Stir in grated Parmesan cheese until melted and well combined.
- Serve warm, garnished with additional Parmesan if desired.
