Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix applesauce, melted vegan butter, and vanilla extract. Pour this mixture into the dry ingredients and stir until just combined.
  4. Gently fold in diced apples using a spatula.
  5. Drop dollops of dough onto prepared baking sheets and bake for 12-15 minutes until edges are golden brown.
  6. Allow cookies to cool on the baking sheets for five minutes before transferring to wire racks.
