- 1 lb lean ground beef
- 1 (15 oz) can black beans, drained and rinsed
- 1 cup diced bell peppers (red or yellow)
- 1 medium yellow onion, chopped
- 1 (14.5 oz) can diced tomatoes with green chilies
- 2 tsp chili powder
- 1 tsp cumin
- 1 cup shredded cheddar cheese
Instructions
- Brown the ground beef in a skillet over medium heat until no longer pink; drain excess fat.
- Add chopped onions and bell peppers to the skillet; sauté for about 5 minutes until fragrant.
- Transfer the mixture to a slow cooker; add black beans, diced tomatoes, chili powder, cumin, salt, and pepper. Stir well.
- Cook on low for 6-8 hours or high for 3-4 hours until heated through.
- About 10 minutes before serving, sprinkle cheddar cheese on top; cover until melted.
