Instructions
- Gather all ingredients and prepare by chopping onions and bell peppers, and mincing garlic.
- Layer the chopped vegetables in the bottom of the slow cooker.
- Place the chicken breasts on top of the vegetables.
- Pour canned tomatoes and chicken broth over the chicken.
- Season generously with cumin, paprika, salt, and pepper; stir gently to combine.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until tender.
- Shred the chicken inside the slow cooker using two forks; mix well before serving.
