- 1 can (20 oz) canned pineapple rings, drained
- 10 maraschino cherries
- ½ cup brown sugar
- ½ cup unsalted butter (1 stick)
- ¾ cup granulated sugar
- 1 ½ cups all-purpose flour
- 2 tsp baking powder
- ¼ tsp salt
- 2 large eggs
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease a round cake pan.
- In the pan, melt butter over low heat and sprinkle brown sugar evenly until dissolved. Arrange pineapple rings and cherries on top.
- In a bowl, cream together granulated sugar and softened butter until fluffy. Add eggs one at a time, then mix in vanilla extract.
- In another bowl, whisk together flour, baking powder, and salt. Gradually add to the wet mixture until just combined.
- Pour the batter over the arranged fruit in the pan.
- Bake for 35-40 minutes or until a toothpick comes out clean. Allow cooling for about 10 minutes before flipping onto a serving plate.
