Instructions
- Preheat oven to 400°F (200°C).
- Season chicken breasts with salt and pepper on both sides.
- In a large oven-safe skillet over medium heat, add olive oil and sauté minced garlic until fragrant (about 30 seconds).
- Add chicken breasts to the skillet and sear for 5-7 minutes per side until golden brown.
- Whisk together balsamic vinegar and honey; pour over the chicken.
- Add cherry tomatoes and spinach around the chicken; stir gently.
- Bake in preheated oven for 20-25 minutes until chicken reaches an internal temperature of 165°F (75°C) and veggies are tender.
