- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 medium zucchinis, sliced into half-moons
- 1 cup cherry tomatoes, halved
- 1 red onion, thinly sliced
- 2 tbsp extra virgin olive oil
- 1 tsp garlic powder
- 1 tsp dried oregano
- ½ cup crumbled feta cheese
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Lightly spray a large baking dish with nonstick cooking spray.
- Pat dry chicken breasts and season both sides with salt, pepper, garlic powder, and oregano.
- In a large bowl, combine seasoned chicken with zucchini, onion, and tomatoes. Drizzle with olive oil and toss to coat.
- Transfer the mixture to the prepared baking dish and crumble feta cheese on top.
- Bake for 30-35 minutes until the chicken reaches an internal temperature of 165°F (75°C) and vegetables are tender.
