Instructions
- In a large skillet over medium heat, cook the chopped bacon or sausage until crispy. Drain excess fat but leave some for cooking.
- Add the diced onions and bell peppers to the skillet; sauté until softened (about 5 minutes).
- Toss in the diced potatoes along with salt, pepper, and paprika. Cook for about 20 minutes until golden brown and tender.
- Create wells in the potato mixture and crack an egg into each well. Cover briefly to cook eggs to your preference.
- Sprinkle shredded cheese over the dish just before serving; allow it to melt slightly.
