- 3 medium zucchinis (sliced thinly)
- 1 cup whole milk ricotta cheese
- 2 cups marinara sauce
- 1/4 cup fresh basil (chopped)
- 1 cup shredded whole milk mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat and sauté zucchini slices for about 3-4 minutes until slightly tender.
- In a baking dish, spread a layer of marinara sauce, then alternate layers of zucchini, ricotta mixed with basil, more marinara, and finish with mozzarella and Parmesan on top.
- Bake for 25-30 minutes until bubbly and golden brown. Let cool slightly before slicing.
