- 1 lb ground beef or turkey
- 1/4 cup honey
- 3 cloves garlic, minced
- 1/4 cup low-sodium soy sauce
- 2 cups cooked long-grain rice
- 1 cup bell peppers, chopped
- 1 cup broccoli florets
- 1 tbsp sesame oil
- 2 green onions, chopped
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
- In a large bowl, mix ground meat, minced garlic, soy sauce, honey, and sesame oil until just combined.
- Shape the mixture into meatballs about one inch in diameter.
- Spread cooked rice evenly across the bottom of the baking dish and add in the chopped vegetables.
- Place the meatballs on top of the rice and veggies.
- Mix additional honey and soy sauce; drizzle over the dish. Cover with foil and bake for 25-30 minutes until meatballs are cooked through.
