- 1 lb fresh medium-sized carrots, peeled and cut into 2-inch pieces
- 3 tbsp unsalted butter
- 3 tbsp pure honey
- 3 garlic cloves, minced
- ½ tsp salt
- ¼ tsp freshly ground black pepper
- 1 tsp fresh thyme (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine the carrots.
- In a small saucepan over low heat, melt the butter and sauté the garlic until fragrant. Stir in the honey and remove from heat.
- Pour the honey garlic mixture over the carrots. Season with salt and pepper; toss until evenly coated.
- Spread the carrots on a baking sheet in a single layer and roast for 25-30 minutes, shaking halfway through until tender and caramelized.
