Instructions
- Preheat your oven to 425°F (220°C).
- Wash, peel, and slice the carrots into even pieces (about 1-inch thick).
- In a small saucepan over medium heat, melt the butter and mix in the honey and minced garlic until fragrant.
- In a large mixing bowl, toss the carrots with the honey garlic butter mixture, salt, and pepper until well coated.
- Spread the carrots evenly on a parchment-lined baking sheet and roast for 25-30 minutes, stirring halfway through until golden brown and tender.
