Instructions
- Preheat your oven to 400°F (200°C).
- Wash, peel, and cut the carrots into uniform pieces, about 2 inches long.
- In a small saucepan over medium heat, melt the butter and sauté the minced garlic until fragrant (about 1 minute).
- Stir in honey, salt, pepper, and thyme until well combined.
- Place the carrots on a baking sheet lined with parchment paper and pour the honey garlic butter mixture over them. Toss to coat evenly.
- Roast for 25-30 minutes or until fork-tender and caramelized, stirring halfway through.
