- 2 cups cheese tortellini (fresh or frozen)
- 1 lb Italian sausage (sweet or spicy)
- 1 can (14.5 oz) diced tomatoes (drained)
- 1 cup heavy cream
- 2 cups fresh spinach
- 1/2 cup grated Parmesan cheese
- 3 cloves garlic (minced)
- 1 onion (finely chopped)
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Sauté onion in a skillet over medium heat until translucent, about 5 minutes. Add minced garlic and cook until lightly golden.
- Crumble Italian sausage into the skillet, cooking until browned. Transfer to the crockpot.
- Add drained diced tomatoes and cheese tortellini to the crockpot; stir gently.
- Pour heavy cream over the mixture; add Italian seasoning, salt, and pepper. Stir to combine.
- Cook on low for 4 hours or high for 2 hours.
- About 15 minutes before serving, stir in fresh spinach until wilted and sprinkle with Parmesan cheese.
