Instructions
- Activate the yeast by mixing warm milk, yeast, and a teaspoon of sugar; let sit until frothy (about 5 minutes).
- In a large bowl, whisk together flour, 1/4 cup sugar, and salt. Add the yeast mixture, melted butter, and eggs. Mix until combined.
- Knead the dough on a floured surface for about 8 minutes until smooth and elastic.
- Place the dough in an oiled bowl, cover with a damp cloth, and let rise in a warm spot until doubled in size (around 1 hour).
- Roll out the dough into a rectangle (1/4 inch thick), brush with melted butter, sprinkle with cinnamon sugar, then roll tightly and slice into rounds.
- Preheat oven to 375°F (190°C). Place cruffin rounds in muffin tins and bake for 20-25 minutes or until golden brown.
