- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 8 oz pasta (spaghetti or penne)
- 8 oz fresh mozzarella cheese
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh basil leaves
- 3 cloves garlic, minced
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
- 1/2 cup heavy cream
Instructions
- Prepare all ingredients: dice chicken, halve cherry tomatoes, and mince garlic.
- Cook pasta in salted boiling water for about 8-10 minutes until al dente. Drain and set aside.
- In a skillet over medium heat, warm olive oil. Add diced chicken, season with salt and pepper, and sauté until golden brown (6-8 minutes).
- Stir in minced garlic; sauté until fragrant (about 30 seconds). Add halved cherry tomatoes and cook until softened.
- Lower heat and mix in heavy cream and mozzarella cheese until melted and creamy. Adjust seasoning if needed.
- Toss cooked pasta into the skillet until well-coated with sauce. Finish with fresh basil.
