  • 8 oz fresh mozzarella cheese
  • 1 cup cherry tomatoes, halved

  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 1/2 cup heavy cream

Instructions

  1. Prepare all ingredients: dice chicken, halve cherry tomatoes, and mince garlic.
  2. Cook pasta in salted boiling water for about 8-10 minutes until al dente. Drain and set aside.
  3. In a skillet over medium heat, warm olive oil. Add diced chicken, season with salt and pepper, and sauté until golden brown (6-8 minutes).
  4. Stir in minced garlic; sauté until fragrant (about 30 seconds). Add halved cherry tomatoes and cook until softened.
  5. Lower heat and mix in heavy cream and mozzarella cheese until melted and creamy. Adjust seasoning if needed.
  6. Toss cooked pasta into the skillet until well-coated with sauce. Finish with fresh basil.
