Instructions

  1. Season chicken breasts with salt and pepper. Heat oil in a skillet over medium heat and cook chicken until golden brown and internal temperature reaches 165°F (75°C), about 5-7 minutes per side. Remove from skillet.
  2. Sauté minced garlic in the same skillet for about 30 seconds until fragrant.
  3. Add chicken broth and soy sauce to deglaze the pan; simmer for about 5 minutes until slightly thickened.
  4. Boil chopped potatoes until fork-tender (15-20 minutes). Drain, then mash with heavy cream and butter until smooth.
  5. Assemble bowls with a scoop of mashed potatoes topped with sliced chicken and drizzled sauce. Garnish with chives or green onions and serve hot.
