- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 3 cloves fresh garlic, minced
- 2 lbs potatoes, peeled and chopped
- 1 cup low-sodium chicken broth
- 1/2 cup heavy cream
- 4 tbsp butter
- 2 tbsp soy sauce
- 2 tbsp chives or green onions, chopped
Instructions
- Season chicken breasts with salt and pepper. Heat oil in a skillet over medium heat and cook chicken until golden brown and internal temperature reaches 165°F (75°C), about 5-7 minutes per side. Remove from skillet.
- Sauté minced garlic in the same skillet for about 30 seconds until fragrant.
- Add chicken broth and soy sauce to deglaze the pan; simmer for about 5 minutes until slightly thickened.
- Boil chopped potatoes until fork-tender (15-20 minutes). Drain, then mash with heavy cream and butter until smooth.
- Assemble bowls with a scoop of mashed potatoes topped with sliced chicken and drizzled sauce. Garnish with chives or green onions and serve hot.
