- 3 boneless, skinless chicken breasts (about 1 lb)
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 yellow bell pepper, diced
- ½ cup ranch dressing
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 1 medium onion, diced
- 2 tsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Chop the bell peppers and onion into bite-sized pieces.
- Heat olive oil in a large skillet over medium heat. Cook the chicken for about 6-7 minutes on each side until golden brown. Let it rest before shredding.
- In the same skillet, add chopped bell peppers and onions; sauté for about 5 minutes until softened.
- Season with chili powder, cumin, salt, and pepper; stir well.
- Lay tortillas flat and fill each with shredded chicken, sautéed veggies, ranch dressing, and cheese at one end. Fold sides in and roll tightly.
- Return rolled burritos seam-side down to the skillet; cook for about 3-4 minutes per side until golden brown.
