- 1 lb lean ground beef
- 1 cup plain breadcrumbs
- 1 medium onion, finely chopped
- 2 large eggs
- 2 cups shredded cheddar cheese
- 1/2 cup ketchup
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp Italian herbs
- 1 cup bell peppers, chopped (any color)
- 2 green onions, chopped
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet over medium heat, sauté the onion and bell peppers until softened (about 5 minutes).
- In a large bowl, mix together ground beef, breadcrumbs, sautéed vegetables, eggs, ketchup, garlic powder, salt, pepper, and Italian herbs until well combined.
- Fold in half of the shredded cheese into the mixture.
- Transfer the mixture to a greased casserole dish and top with remaining cheese.
- Bake for 45-50 minutes until cooked through (internal temperature should reach 160°F) and cheese is bubbly.
