- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 large sweet potatoes (about 1 lb), peeled and cubed
- 2 tbsp olive oil
- 1 cup barbecue sauce (store-bought or homemade)
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Fresh cilantro (optional), for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, toss cubed sweet potatoes with olive oil, salt, pepper, garlic powder, and smoked paprika until coated.
- Spread sweet potatoes on a parchment-lined baking sheet and roast for 25-30 minutes until golden brown.
- While sweet potatoes roast, season chicken breasts with salt, pepper, garlic powder, and smoked paprika. Grill or pan-sear over medium heat for about 6-7 minutes per side until cooked through.
- Brush barbecue sauce on chicken breasts while they rest.
- In serving bowls, layer roasted sweet potatoes and sliced BBQ chicken. Garnish with chopped cilantro if desired.
