- 1 lb ground beef (80/20)
- 1 cup breadcrumbs (plain or Italian)
- 2 large eggs
- 1 medium onion (finely chopped)
- 3 cloves garlic (minced)
- 1/2 cup balsamic vinegar
- 1/3 cup ketchup
- 2 tbsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp fresh parsley (chopped, optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Sauté chopped onions in a skillet over medium heat until translucent. Add minced garlic and sauté for an additional minute.
- In a large bowl, combine ground beef, breadcrumbs, eggs, sautéed onions and garlic, balsamic vinegar, ketchup, Worcestershire sauce, salt, pepper, and parsley. Mix until just combined.
- Shape the mixture into a loaf and place it in a loaf pan or on a lined baking sheet.
- In a small bowl, whisk together the remaining balsamic vinegar and ketchup for the glaze. Brush generously over the meatloaf.
- Bake for about 60 minutes or until the internal temperature reaches 160°F (70°C). Allow resting for 10 minutes before slicing.
