  • 1 cup breadcrumbs (plain or Italian)
  • 2 large eggs
  • 1 medium onion (finely chopped)
  • 3 cloves garlic (minced)
  • 1/2 cup balsamic vinegar
  • 1/3 cup ketchup
  • 2 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh parsley (chopped, optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sauté chopped onions in a skillet over medium heat until translucent. Add minced garlic and sauté for an additional minute.
  3. In a large bowl, combine ground beef, breadcrumbs, eggs, sautéed onions and garlic, balsamic vinegar, ketchup, Worcestershire sauce, salt, pepper, and parsley. Mix until just combined.
  4. Shape the mixture into a loaf and place it in a loaf pan or on a lined baking sheet.
  5. In a small bowl, whisk together the remaining balsamic vinegar and ketchup for the glaze. Brush generously over the meatloaf.
  6. Bake for about 60 minutes or until the internal temperature reaches 160°F (70°C). Allow resting for 10 minutes before slicing.
