Instructions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a bowl, whisk together flour, baking powder, cinnamon, and a pinch of salt.
- In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy (3-4 minutes).
- Mix in egg and vanilla extract until well combined.
- Gently fold in diced apples.
- Scoop tablespoon-sized portions onto prepared baking sheets and roll each ball in the cinnamon-sugar mixture before placing them back on the sheets.
- Bake for 10-12 minutes or until lightly golden around the edges.
- Allow cookies to cool on wire racks before serving.
