  • 6 slices thick-cut bacon (divided)
  • 1 cup bourbon-infused BBQ sauce
  • 1 cup breadcrumbs (preferably panko)
  • 1 cup shredded sharp cheddar cheese
  • 1 medium onion, minced
  • 3 cloves garlic, minced
  • 2 tsp Italian seasoning
  • 4 sub rolls

Instructions

  1. Preheat the oven to 400°F (200°C). In a large bowl, combine ground beef, breadcrumbs, minced onion, garlic, Italian seasoning, salt, and pepper until mixed.
  2. Chop half of the bacon into small pieces and fold it into the meatball mixture.
  3. Form the mixture into 1-inch meatballs and place them on a parchment-lined baking sheet.
  4. Bake for 20–25 minutes or until golden brown.
  5. In a skillet over medium heat, combine baked meatballs with BBQ sauce and simmer for 5 minutes.
  6. Slice sub rolls open and fill them with meatballs. Top with shredded cheese and remaining chopped bacon; broil until melted.
