- 2 lbs lean ground beef
- 6 slices thick-cut bacon (divided)
- 1 cup bourbon-infused BBQ sauce
- 1 cup breadcrumbs (preferably panko)
- 1 cup shredded sharp cheddar cheese
- 1 medium onion, minced
- 3 cloves garlic, minced
- 2 tsp Italian seasoning
- 4 sub rolls
Instructions
- Preheat the oven to 400°F (200°C). In a large bowl, combine ground beef, breadcrumbs, minced onion, garlic, Italian seasoning, salt, and pepper until mixed.
- Chop half of the bacon into small pieces and fold it into the meatball mixture.
- Form the mixture into 1-inch meatballs and place them on a parchment-lined baking sheet.
- Bake for 20–25 minutes or until golden brown.
- In a skillet over medium heat, combine baked meatballs with BBQ sauce and simmer for 5 minutes.
- Slice sub rolls open and fill them with meatballs. Top with shredded cheese and remaining chopped bacon; broil until melted.
