- 1/4 cup honey or maple syrup (to taste)
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking dish.
- In a large bowl, mix together rolled oats, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, combine mashed banana, eggs, and milk until well blended. Stir in grated carrots.
- Fold the wet ingredients into the dry mixture until just combined. Add nuts if desired.
- Pour the mixture into the prepared baking dish and smooth the top.
- Bake for 30-35 minutes until set and golden brown. Let cool slightly before slicing.
