Instructions

- In another bowl, combine lemon juice, zest, and sugar; stir until sugar is dissolved.
- Gently heat the bloomed gelatin until fully dissolved; let cool slightly before adding to the lemon mixture.
- Fold the whipped cream into the lemon mixture carefully to maintain airiness.
- Spoon the mousse into serving cups and refrigerate for at least two hours before serving.
