Ingredients
- 1 lb fresh shrimp, peeled and deveined
- 2 cups sweet corn (about 2 ears)
- 1 lb baby potatoes, halved
- 12 oz smoked sausage, sliced
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Prepare four large pieces of aluminum foil.
- Rinse shrimp under cold water and pat dry. Chop potatoes into bite-sized pieces and slice sausage.
- In a large bowl, mix shrimp, corn, potatoes, sausage, olive oil, garlic powder, paprika, salt, and pepper until well-coated.
- Spoon equal portions onto each piece of foil; fold tightly to seal packets.
- Preheat grill to medium-high heat (400°F). Cook packets on the grill for 15-20 minutes until ingredients are cooked through.
- Carefully open packets (watch for steam) and serve hot with lemon wedges.
