- 4 boneless, skinless chicken breasts
- 2 lbs Russet potatoes, peeled and chopped
- 4 tbsp unsalted butter
- 1/2 cup heavy cream
- 1 tsp garlic powder
- Salt and pepper to taste
- 1 cup green beans or corn (optional)
Instructions
- Preheat oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray.
- Season chicken breasts with salt and pepper and place in the baking dish. Bake for 25-30 minutes until cooked through.
- Meanwhile, boil chopped potatoes in salted water for about 15-20 minutes until fork-tender.
- Drain potatoes and return them to the pot. Add butter and heavy cream; mash until smooth.
- Slice cooked chicken into bite-sized pieces. In serving bowls, layer mashed potatoes, topped with chicken and your choice of vegetables.
- Serve hot, drizzled with gravy if desired.
