Instructions
- Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat and sear the chicken for 6-7 minutes per side until golden brown and fully cooked.
- Remove from skillet and let rest briefly before shredding into bite-sized pieces with two forks.
- In a bowl, mash the avocados with fresh lime juice until creamy yet chunky. Mix in chopped cilantro if desired.
- Warm each tortilla in a dry skillet for flexibility. Layer shredded chicken, black beans, avocado mix, chopped vegetables, and cheese in each tortilla’s center.
- Fold in the sides of the tortilla and roll tightly from one end to the other. Secure with toothpicks if necessary.
- For a crispy finish, toast burritos seam-side down in the skillet for about 2-3 minutes per side.
