- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 8 oz Boursin cheese
- 1 cup orzo pasta
- 3 cups low-sodium chicken broth
- 2 cups fresh spinach
- 2 tbsp extra virgin olive oil
- 4 garlic cloves, minced
- 2 tbsp fresh lemon juice
Instructions
- Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium heat. Cook chicken until golden brown and cooked through, about 6–7 minutes per side. Remove from skillet and set aside.
- In the same skillet, sauté minced garlic until fragrant, about 30 seconds.
- Add orzo and chicken broth; bring to a gentle boil. Simmer until orzo is al dente, about 8–10 minutes.
- Lower heat and stir in Boursin cheese until melted and creamy.
- Add fresh spinach and sliced chicken back into the pan; stir until spinach wilts.
- Finish with fresh lemon juice before serving hot.
