- 4 boneless, skinless chicken breasts (about 1 lb)
- 4 cloves fresh garlic, minced
- 2 medium carrots, diced

- 2 cups fresh spinach or kale
- 1 can (14.5 oz) diced tomatoes in juice
- 6 cups low-sodium chicken broth
- 2 tsp Italian seasoning

Instructions
- Dice chicken into bite-sized pieces. Chop carrots and celery uniformly.
- In a large pot, heat 2 tbsp of olive oil over medium heat. Add minced garlic and sauté for about 1 minute.
- Add diced onions (1 medium onion) and cook until translucent.
- Stir in carrots and celery; cook for about 5 minutes until slightly softened.
- Add diced chicken; season with salt and pepper. Cook until no longer pink (about 5 minutes).
- Pour in chicken broth, canned tomatoes, and Italian seasoning; bring to a gentle simmer.
- Add spinach or kale; stir until wilted (about 2 minutes). Serve topped with freshly grated Parmesan cheese.
