- 4 boneless, skinless chicken breasts
- 2 medium yellow onions, sliced
- 3 cloves garlic, minced
- 1 cup Swiss cheese, shredded (or Gruyère)
- 1/2 cup bread crumbs
- 1/2 cup chicken broth
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh thyme (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, heat olive oil and sauté onions until translucent (about 10 minutes). Add minced garlic for another minute.
- Create pockets in the chicken breasts by slicing them carefully without cutting all the way through.
- Stuff each pocket with the onion-garlic mixture and top with Swiss cheese.
- Season with salt, pepper, and thyme if using. Place in a baking dish and bake for 25-30 minutes until cooked through.
