Instructions
- Dice chicken into bite-sized pieces.
- Heat olive oil in a large skillet over medium heat; cook chicken until golden brown (7-10 minutes).
- Remove chicken and sauté onion and bell peppers for about 5 minutes until softened.
- Stir in minced garlic and taco seasoning; cook for an additional minute.
- Add cream cheese and chicken broth to the skillet; stir until smooth.
- Mix in shredded cheddar cheese and adjust seasoning as needed.
- Serve warm over rice or pasta, or enjoy with tortilla chips.
